The dietetic culture The difference of zones causes the difference of dietetic culture,and it comes from diverse styles of thinking and philosophy.Here I will talk about a feast of the following two zones—China and the west countries. Our people often connect food with its taste and affection to the body. Our country has a great civilization of history ,including the dietetic history .So there are lots of characters from different points of view. First,multiplicity of styles .Thanks to the amplitude of our great motherland and its vast territory and abundant resources,different customs and climates affect local tastes. It has been existed for so long time that we can distinguish a man about his motherprovince from his taste.The south Chinese people usually takes rice for their main staple food and people in the north takes flour.We can alse divide the tastes into four big parts: sweet for the south ,salty for the north ,acid for the east and hot for the west. For these reasons,you won’t be surprised when hearing or seeing “正宗川菜”、“风味北京小吃”……Remember that:a place can be famouse because of a piece of snack. Second,we takes different food acrrodind to some circumstances in the four seasons. Generally speaking,the snakes taste denser in winter and compared more insipid in summer.In summer, we usually eat some fruits cold and dressed with sause. Sometimes, I append some suger into the watermelon so it tastes more sweet.In winter, we always get together and have a feast around a chaffy dish.By the way, the charry dish here in Chongqing is qiute famouse in China even the world.In my eyes, these phenomena can be an embodiment of adaption to the nature. We can use the hot food to defend the chilliness and the cool food to clear the hot summer. Third,they will pay more attention to art when our cookers operating his tools.A good cooker here when we assess his work, the beauty of a dish can’t be ignored. The master often tells his prentice that an excellent dish can bring people a comfortable and good mood.So an excellent cooker must pay attention to the colors, smell, taste.No matter the material is a carrot or a cabbage,it has its function in a dish, they can also be an important part of a perfect dish。 Then we give a name to a dish in a humor way.The name is produced from its materials and special meanings.Sometimes,we also name it for a man or a fairy story. Here ,I have searched some names though the Internet:quanjiafu(“全家福”)、shizitou“狮子头”、douporou“东坡肉”、guifeiji“贵妃鸡”、diaochandoufu“貂蝉豆腐”、xishishe“西施舌”、zhaojunjia“昭君鸭”、jiaohuaji“叫化鸡”…… Some famous novels like 《射雕英雄传》relates to the name .Its clever heroine HuangRong name her dishes elegantly. The most important is what? Chinese meal is related to the body’s health directly.Since Zhou Dynasty, our ancestors have payed attention to the relationship between nutrition and meals. Bread is the staff of life.The ancient doctors especially notice the connection of food and diseases.In Zhou Dynasty,we even divided doctors into four part and the doctors who were in charge with food is one part of it. They told the later generations that food is more important than the medicines.We eat a sume of food every day, but we take medicine when we are just ill. The civilization in the west is extremely different. We can give a definition that it is the addition of inspirit and matter that the people in the west have been creating and stimulating.It has comparetively rich history characteristic and system frame which affect the dietietic civilization biggishly. First, the worker is keep improving when producing the food for his buyers. Because they are always pursuing the perfection, so their work appeals to the whole world.They also attach importance to the cooperation of the cate, good name and beautiful area. Second,there are four sorts if you want to classify the west recipes. Cooking technique, cooking culture and art, cookiing science, colligation. It has its own view of zoology and balanced nutrition. Third, various folk-customs.Generally speaking, the people give priority to the meat, and the vegetables for the complement. Well, they often enjoy themselves with a big feast in the red days to beg on the God. In the socility, what they notice most is “Ladies first”,which we can get the information in many films of the west countries. Though west countries have so many common grouds, different coutries have their own characteristics. Someone has generalized the history of the dietetic culture:Italy food is the origination, France is the king and America is the new noble. France is the country builded on the base of ruined west Rome Empire. When it was still called Rome Province, some famous chef came there from Rome and Athens. They settle the basic technology of France food. Because the past kings of dynasties in Frence advocatedcate, temporal chef come forth in great number.But nowadays, France meal develope toward conservative and slow.Italy lacated in a byland of meridional. The ascendant geography made it possible that gondola factory of food was upgrowth, especially like its noodles ,which is celebrated by the world. As to America, the unique super country in the world at thess yeas. Many Americans are the afterwold of pommy,so America food develops based on English food. In addition, duo to that it has a short history, traditional and conservative thoughs are less.The farming and herd products of located Americans have combined the customs of immigrants with the Indians. At present, you will see the fast food here and there along the streets or in the supermarkets. After having introducd the history and characteristics of the two sides, I will described the differences in details. First, we nourish different concepts. We eat the same foods without the same intentions.The westers take dishes mainly for allaying hunger.They often choose joint and big bones for they are alibility.The west hold on a view that the man should ensure about the nutrition no matter how the food tastes and looks like. They pay more attention to the quantity of heat, vitamines, protein, and so on. Even if the tastes are all and singular, you should eat it because of the nutrition. This concept and their plilosophy are on speaking terms. The plilosophy has bought vital force in the west in the development of natural science, psychology, methodology. On the other hand , it can be the block of the dietetic development. As a dish, steak is steak, chicken is chicken. What’s the result, different raw materials are out of the picture, so it is usually more brief without any creation.In China, you will hardly see a scene that a good cooker doesn’t add anything into his boiler. Except for its tasteful, Chinese food is less of nutrition. In a word, we think more about the pervation of various materials,and they ensure the nutrient semmetry. Second, the style of cuisine is different. In China, cooking is regarded as art, even a sort of sports . Like painting, music, poem and dancing, cooking does make sense in the stage of improving the interest of life. So many ways and means we have when dealing with the kitchen: stew, bake, quick-boil, braise, fry, burst, crisp……The transformation of Chinese meal is complex, and dishes takes more time.What’s worse, some food in the tray is unedible. West meal emphasize science and nutrition. The whole process of cooking acts as the standard of science strictly. So the chef’s job is boring. Third, the convenance of haning dinner is a difference. In China, no matter the family meal or the meal in due form, we get together sharing a feast and don’t stop the toast to represent our respect to others, the virtue of comity, and the atmosphere of reunion. On the festivals, we become joyous together depending on drinking and eating in particular. Occidental habit is dividing the meal first and then each one can take his or her portion. They may sit around a table, but they can change the seat and get around in free with his single tray and dish. Fourth, our tea cultrue is different. It is obvious .We prefer to the clear tea and they prefer the tea with some milk or suger.In addition, we have a custom of savouring tea. Our olders likes green tea, and the foreigners likes red tea.It is said that green tea can’t be keeped for a long time. Fifth, we use different tablewares when having a dinner. Chopstics is our main tool and the spoon is the supplement. Then you can see the cup, tray, bowl and dish. Well ,they use the metal knife and fork more often. Handleless cup is their container of wine. Actually, both of the two sides have good qualities and disadvantages. Along with the change of seven seas in economy, the two civilization will come to amalgamation.And the people in the world will enjoy the feast of daintiness which will be completed in a fast and more nutritional way.
